In the Kitchen: Citrus Salmon for dinner {recipe} and Perricone Cold Plasma winner

There’s something about summer (or in my case the perpetual summer like weather) that pairs so well with citrus.  Whether it’s fresh squeezed orange juice or a squirt of lemon on some fresh oysters, I love the taste of this brightly colored family of fruits even more so this time of year.I’ve been trying to incorporate more fish in our diet and this summery, lemony salmon is simple and delicious.  I first heard about it from Sarah, but adapted it slightly.

Ingredients:
– 1/2 lemon
– 1 tsp mirin
– dash of sugar
– pinch of ginger powder
– 1 tbsp canola oil
– 2 4-6 oz skinless salmon fillets
– Bit less than 1/2 cup water

Directions:
1. Cut several thin slices of lemon; set aside. Juice remaining 1/2 lemon into a 1 cup measure; add water to equal 1/2 cup. Stir in mirin, sugar, and ginger powder. Set aside.
2. In 12-inch nonstick skillet, heat butter over medium-high heat.  Sprinkle salmon with salt and pepper; add to skillet.
3. Cook 2 to 3 minutes or until bottom is golden; turn fillets. Add lemon juice mixture. Top with lemon slices. Reduce heat to medium; cover and cook 5 to 6 minutes more or until fish flakes easily when tested with fork. Season with salt and pepper.

    I just love salmon and citrus done simply with something green and some rice. Perfect on a hot summer’s day. And yes citrus fruit sometimes are the king!

    That looks delish! Adding salt, pepper and lemon in the ONLY way I know how to cook salmon. Lame, I know. Even more lame…I don’t know what mirin is. Thank goodness for Google. And salmon. ☺
