Pudding is one of the foods I always seem to make from a box.

After all, you just mix the powder with milk, set it, and get some tasty pudding a few hours later.

But I remember watching Alton Brown and hearing him comment that home made pudding is actually really easy.  I was of course curious and found a simple recipe here.  There can be lumpiness from the corn starch, but I didn’t mind this.  You can certainly run your pudding through a sieve or nut bag to even out any soft lumps.

You must also remember to chill the pudding for a few hours.  I made it only a few hours before a dinner party and had it in a large bowl.  It simply wasn’t cool enough and didn’t have as much flavor. Chill in small cups if you can to cut down chilling time!

Butterscotch pudding

Adapted from Taste of Home

Ingredients

  • 1/2 cup brown sugar
  • 2 tablespoons plus 2 teaspoons of cornstarch
  • 1/8 teaspoon salt
  • 2 cups low fat or skim milk
  • 2 egg yolks, beaten
  • 1 tablespoon butter
  • 1 1/2 teaspoon vanilla extract
Servings

About 4 servings

Preparation

1. Combine first three dry ingredients in a small sauce pan and cook for a minute over medium heat.

2. Pour in milk and eggs and stir constantly to combine.

3. Wait for mixture to come to a simmer and thicken.

4. Take the pudding off the heat and stir in butter and vanilla.

5. Chill for at least 8 hours in a large bowl or 4 hours in small dessert bowls.

    I’ve never ventured to make pudding on my own, so as a result I never eat it! But discovering that it is this easy makes me think I should give it a go!
