Healthy Chocolate Date Truffles

July 12, 2017

Chocolate and healthy don’t sound like they belong in the same sentence.  After all, if many of us could eat chocolate with no consequences, we would eat a lot more of it right? My little one formerly shunned chocolate but then quickly became a chocolate addict.

While I’ll allow her some dark chocolate and M&Ms occasionally, I don’t want to indulge her chocolate cravings too often.  I still try to minimize her sugar intake and wanted to give her chocolate without feeling guilty.  So I’m so glad that I discovered how to make healthy chocolate date truffles.  These have a wonderful rich chocolate flavor.  But they’re sugar free!

These healthy chocolate date truffles can be dressed up in different ways.  Cover them in your choice of cocoa powder, coconut flakes, or nuts.  If you blend the dates and cashews with water, the truffles will be a little more wet.  But you can simply refrigerate or freeze the truffles to firm them up.  I have packed them once or twice as part of my little one’s school snack and my husband happily gobbles up a few.  This is definitely a staple and easy recipe in our house now and I hope you enjoy them too!

Healthy chocolate date truffles

Ingredients

  • 1 1/2 cups pitted dates, soaked in water overnight
  • 1/2 cup cocoa powder plus 1/4 cup for dusting
  • 1/2 cup cashews
  • 1 tsp vanilla extract
  • 1/4 cup coconut flakes (optional)
Servings

About 10-12 1″ balls

Special equipment

Blender or food processor

Preparation

1. Soak dates in water overnight so water just covers the dates. Remove dates and keep a little water for blending (1/4 cup at most).
2. Blend/Grind/Crush in food processor all ingredients, except 1/4 cup cocoa powder and coconut.
3. Remove chocolate from blender or food process and roll into 1″ balls.  Roll chocolate in cocoa powder or coconut.  Chill in refrigerator about 30 minutes to harden or eat immediately if you can’t wait!

Can this be done wthout dates or raisins? I dislike both, I know I’m weird. LOL!

Hmm I will research date alternatives for you Shireen! Dates are such an easy sugar free replacement, but there’s gotta be another option. Are you ok with other dried fruits?

Dark chocolate and dates are pretty good for you. The hubs would love this as he’s a big fan of those things — and truffles, too.
