Healthy Tropical Rice Krispies Treats

I forgot how much I liked Rice Krispies treats until I made a version of the classic a few months ago.  The rice krispies treats were gooey, sticky, sweet, and totally satisfying.  I was also pretty happy because I could easily give these treats to my daughter.  Yay for gluten free treats! But I also feel a little guilty stuffing the little one full of sugar and whatever else goes into mass produced marshmallows.  I experimented with a few healthier versions and found it’s actually not too hard creating a healthier version.

Traditional Rice Krispies treats are gooey and sweet because of the marshmallows.  The peanut butter and honey do the job here.  I decided to add in another layer of flavor and texture.  My little one loves dried mango so I put that and coconut into the Rice Krispies treats as well.  I really like the combination of flavors and this is luckily almost as easy to make as the original version.  I’ll be having a few extra tropical Rice Krispies treats this summer!

Healthy Tropical Rice Krispies treats

Ingredients

  • 2 cups Rice Krispies or other puffed rice cereal
  • 1/2 cup peanut butter
  • 1/2 cup honey (brown rice syrup is great if you can find it)
  • 1/4 cup coconut flakes or pieces
  • 1/4 cup dried mango
Servings
About 8 servings
Special equipment

Wax paper or silpat

Baking Tray

Preparation

1. Line baking tray with silat mat or wax paper.
2. Set aside the Rice Krispies.
3. Heat the peanut butter and honey over low heat until ingredients have combined.
4. Pour peanut mixture into Rice Krispies and add mango and coconut as well.
5. Press mixture firmly into pan.  Let this set for about 30 minutes or refrigerate the mixture. Cut into desired number of piece and enjoy!
